A brewery known as a hub for promoting Japanese sake.

Imayo Tsukasa Sake Brewery was founded in 1767 by the first-generation brewer Tajimaya Juzaemon. Initially, the business was in the liquor wholesale business, ryokan (traditional Japanese inn) business, and restaurant business. From the late Edo period to the early Meiji period, Niigata is said to have had a larger population than Edo, as Kitamaebune cargo ships frequently stopped at the port. As a result, the city of Niigata is full of vitality, and Imayo Tsukasa, which is located in Niigata, has prospered along with it.

Types of Sake

Specially designated sake is more particular about the ingredients than regular sake and is divided into classes based on (1) the rice polishing ratio (how much it is polished), (2) whether it is made using ginjo brewing, and (3) whether it contains distilled alcohol.

In general, the lower the rice polishing ratio (more rice is shaved off), the more elegant the sake will be with fewer unpleasant flavors and a cleaner taste with a stronger aroma. By shaving a lot of rice, proteins and fats are removed, resulting in a clearer flavor.

When you first start drinking sake, many people find that they don't like its unique flavor, so if you're new to sake, we recommend a type of sake with a low rice polishing ratio.

*What is the rice polishing ratio? Rice polishing ratio is the percentage of rice that remains after polishing (when the surface layer is removed from brown rice) expressed as a percentage.
