Types of Sake
Specially designated sake is more particular about the ingredients than regular sake and is divided into classes based on (1) the rice polishing ratio (how much it is polished), (2) whether it is made using ginjo brewing, and (3) whether it contains distilled alcohol.
In general, the lower the rice polishing ratio (more rice is shaved off), the more elegant the sake will be with fewer unpleasant flavors and a cleaner taste with a stronger aroma. By shaving a lot of rice, proteins and fats are removed, resulting in a clearer flavor.
When you first start drinking sake, many people find that they don't like its unique flavor, so if you're new to sake, we recommend a type of sake with a low rice polishing ratio.
