Activity

Compare sake with different rice polishing ratios. You can also taste rare Junmai Daiginjo.

Sake available for tasting [3 types of sake are available for tasting.]
1) Junmai: A junmai sake with a clean, refreshing taste. You can enjoy the original flavor of the rice. It's brewed in the cold season with natural fresh water from the Echigo Nagaoka Higashiyama mountain range.
2) Junmai Ginjo: Characterized by its flavorful aroma and the delicious flavor of rice itself, with a smooth finish without any aftertaste.
3) Junmai Daiginjo: Stored at low temperatures, it is characterized by its rich aroma and the mild flavor of the rice used.

Experience traditional Japanese sake brewing

Using models and panels, we will explain the sake brewing process in an easy-to-understand manner.

Take a commemorative photo in front of the main building, a registered national tangible cultural property (may be canceled in the event of bad weather)

The main building with a thatched roof was built during the Horeki era (1751 to 1764) in the Edo period. It was designated as a registered tangible cultural property in 2006.

Characteristics of Ofuku Sake Brewery

The brewery originated the "fast brewing method": Developed a brewing technique still used today - Ofuku Sake Brewery was the first in Japan to discover that lactic acid plays an important role in the sake production process. Since then, the production method at Ofuku Sake Brewery has been introduced all across Japan, and 90% of breweries now practice this method.

This brewery has won many awards at sake contests!

We have produced two winners of the Yellow Ribbon Medal of Honor (the only brewery in Japan to recieve this award)

  • Sake brewing explanation (5 minutes)

    Brief explanation of sake brewing using models and PowerPoint presentations

  • Brewery tour (10 minutes)

    We will show you a part of the brewery. Please note that the areas that can be visited will change depending on the season and the progress of sake brewing. We appreciate your understanding.
    We will guide you through the sake brewing process you can't see at other companies.

  • Commemorative photo

    If weather permits, we will help you take a commemorative photo in front of the main building, a registered national tangible cultural property.

  • Taste & Compare (15 minutes)

    Compare [3 types] of Ofuku's Junmai sake at the main shop, Fuku no Kura.
    You will be presented with a sake comparison sheet on which you can write down your impressions of the sake. You can use it as a reference for your next sake selection.

Notes

What is your image of Japanese sake?
You may think it has a strong alcohol content, a sharp flavor, it is bitter, and it is a drink for the elderly...
However, sake can be described as the following. (Sake is made from rice, water, koji, yeast, and lactic acid)
・You can enjoy the natural flavor of rice
・It is fruity and sweet
・It is an alcoholic beverage

The sake brewing process at Ofuku Sake Brewery includes the following steps:
1) Rice polishing
2) Washing the rice
3) Adding water (allowing the rice to absorb water)
4) Steaming the rice
5) Creating yeast (time to collect a pure yeast culture: about 14 days)
6) Creating koji culture (time for koji to propagate on steamed rice: about 2 days)
7) Brewing (Fermentation time: about 28 days)
8) Squeezing (putting "moromi" fermenting mixture in a bag and pressurizing)
