Activity

Take part in the actual production of Awamori as a brewer in the behind-the-scenes areas of a distillery, usually off-limits to the public.

You can experience the intricacies of Awamori making at a distillery that inherits the traditions and natural blessings of Ishigaki Island.

What is Awamori?

Awamori is the oldest distilled spirit in Japan, produced in the Ryukyu Islands.
It is said that distillation techniques for alcohol, which developed in Western Asia in the early 13th century, were transmitted to the Ryukyu Islands via China and Thailand.
At that time, Awamori was presented as a tribute to Asian countries through trade and was regarded as a luxury item that only royalty could drink.

Awamori brewing & fermentation

In the brewing process, local water and rice are used to create the foundation of Awamori through traditional handcraft methods.
Next, during the fermentation process, you will observe the changes in aroma and the movement of bubbles over time while learning about the fermentation process.

Shipping of Awamori

Additionally, you can take part in the process of labeling and packaging the Awamori, helping to finalize it as a product.
By assisting in preparing the completed Awamori for shipment, you can share in the sense of accomplishment and pride of the producers.

This is a special activity where you can experience the charm of Awamori, nurtured by the nature and traditions of Ishigaki Island.

You can get a close look at the techniques that craftsmen have honed over many years, while being surrounded by the aroma of the distillery and interacting with local ingredients.


Schedule

  • 12:00 PM Reception / Meet-up

    Please show the My Page reservation screen when checking in. You will be given an explanation about the distillery, the history of Awamori (including its differences from shochu, etc.), and local ingredients that pair well with Awamori.

  • Brewing process, fermentation (rice steaming)

    300kg of rice are transferred to the wooden box in the koji room and flattened.

  • Awamori tasting, fermentation process (black koji mold inoculation process)

    • You can enjoy tasting the Awamori while the temperature of the steamed rice cools down.
    • Once the steamed rice has cooled, black koji is mixed in, and the rice is left to rest.

  • Cashier duties, label application, packaging, and shipping

    You can send a photo or text of your choice to the distillery staff on the spot (AirDrop from an iPhone is also possible), and an original label will be created for your Awamori. You can take home a one-of-a-kind design as a souvenir.

  • 3:00 PM End of the activity / Disband
