Usukuchi (light) soy sauce is an essential ingredient in Japanese cuisine! Its defining feature is enhancing the natural flavors of ingredients. In Tatsuno, the birthplace of usukuchi soy sauce, you can learn to prepare Japanese dishes using locally grown organic vegetables.

Learn how to use usukuchi soy sauce—directly from the founding family of Higashimaru Shoyu!

This cooking class teaches the proper methods for using usukuchi soy sauce, as passed down through the founding family of Higashimaru Shoyu, the leading producer of usukuchi soy sauce.

Receive a special lecture to delve deeper into the differences between usukuchi (light) and koikuchi (dark) soy sauce

Through a special lecture on usukuchi soy sauce, you will learn the difference between usukuchi (light) soy sauce and koikuchi (dark) soy sauce from Mr. Asai, a member of the founding family of Higashimaru Shoyu Co., Ltd.

Participate in a hands-on cooking class

In this small class of up to 8 participants, you’ll have the opportunity to learn and enjoy cooking by actively participating, in addition to watching the instructor's demonstration.

Enjoy the dishes you've prepared while having a fun conversation with your instructor.


Schedule

  • Arrival and introduction to the experience (10:45am-11:00am)

    Show the reservation page from your My Page reservation screen upon arrival.

  • Receive an explanation of the dishes and start cooking (11:00am-12:30pm)

    First, you will enjoy an introductory lecture on the history of soy sauce and the difference between usukuchi and koikuchi soy sauce.
    After that, you will receive an explanation of the dishes and, after the instructor's demonstration, have the opportunity to try cooking them yourself.

  • After you've finished cooking it's time for lunch! (12:30pm-1:30pm)

    Converse with the instructor and other participants while enjoying your lunch made with locally grown organic vegetables. If you have any questions about the dishes or soy sauce, the instructor will answer them as you enjoy your meal.
    (You can choose either coffee or tea with dessert.)

  • End of activity (1:30pm) *The optional guided city walk will be from 1:30pm to 3:00pm

    Special guided tour by Mr. Asai, who knows the castle town of Tatsuno inside and out.
    Including the Usukuchi Tatsuno Soy Sauce Museum, Tatsuno Castle, and Shuentei.
    *The itinerary may change depending on the circumstances of the day.
