Savor local sake brewed with the Ibo River's subterranean water, perfectly paired with soy sauce-based dishes!

The rich water system of the Ibo River has nurtured the fermentation culture of sake and soy sauce, giving rise to local industries such as sake, usukuchi (light) soy sauce, and somen noodles. With the blessings of the Ibo River, you can experience a local pairing of sake made from the river’s water and soy sauce-based dishes crafted using local ingredients.

Learn about the fermentation cultures of Shiso, the birthplace of Japanese sake, and Tatsuno, the birthplace of usukuchi soy sauce!

Shiso is called the "birthplace of Japanese sake" due to a passage in the Harima no Kuni Fudoki, which contains the oldest written record of sake in existing historical texts. Additionally, Tatsuno, as the birthplace of usukuchi soy sauce, has supported Japan's food culture, including in Kyoto and Osaka, for over 350 years. This is the only pairing experience in Japan where you can simultaneously learn about these two representative fermentation cultures.

Discover the intricacies of sake brewing, where the brewers' techniques create unique differences, even using the same water!

Using water from the same water system of the Ibo River, local sake is brewed with distinct flavors and characteristics, thanks to the techniques of the brewers. You can experience the depth of sake brewing and savor the true essence of Japanese sake by tasting and comparing the sakes from three different breweries.

Learn the difference between usukuchi soy sauce and koikuchi soy sauce while enjoying soy sauce-based dishes!

Through a special lecture on usukuchi soy sauce, you will learn the difference between usukuchi (light) soy sauce and koikuchi (dark) soy sauce from Mr. Asai, a member of the founding family of Higashimaru Shoyu Co., Ltd.

    Special guided tour by Mr. Asai, who knows the castle town of Tatsuno inside and out. Including the Usukuchi Tatsuno Soy Sauce Museum, Tatsuno Castle, and Shuentei. *The itinerary may change depending on the circumstances of the day.

  • Arrival and tour briefing (10 minutes)

  • Receive an explanation of sake and soy sauce (30 minutes)

    First, you will enjoy an interactive explanation of the history of sake and soy sauce, the characteristics of local sake from each brewery, and the differences between usukuchi and koikuchi soy sauce.

  • Enjoy soy sauce-based dishes paired with local sake (60-80 minutes)

    Experience a comparison of three different types of sake paired with soy sauce-based dishes, with explanations from the instructor. If desired, you can also order more sake (at an additional cost).

  • End of experience (Pairing meal will end by 7:00pm)
