Decide how you will blend the spices and create your recipe
Decide upon a shichimi blend of your liking by adjusting the balance of Fukure mandarin peel, chili, white and black sesame, red shiso, Jerusalem artichoke, and shiitake until it’s just right.
Measure out each of the seven ingredients
Following your own recipe, measure out the mandarin peel, along with the remaining six spices.
Grind the aromatic mandarin peel and mix in the remaining spices to complete your shichimi blend
Using a mortar, gently grind the Fukure mandarin peel to your liking. Add the remaining spices to the mortar and mix well until evenly combined.
Bottle your shichimi to take home with you
Transfer your finished shichimi to a bottle and add a label.
