What is a "Tsurushi-giri" (hang-cut) of anglerfish?

As the name suggests, this is a method of cutting anglerfish by hanging it from above. For a long time, "Tsurushi-giri" (hanging and cutting) has been the standard due to the slippery, thick skin of anglerfish making it difficult to cut on a cutting board. Instead, it is easier to cut the fish by hanging it up and rotating it.

Food-enthusiasts have been captivated by anglerfish for generations, as it is widely recognized as a premium fish.

Despite being avoided due to its appearance, this fish is actually good for both beauty and health! Great for women due to its high protein intake, low fat content, and being filled with collagen. Specifically, due to its silky texture and richness, the angler's liver is referred to as the "foie gras" of the sea.
